Since I first became vegan in 2011, I found recipes to be overcomplicated for beginners (& lazy vegans), used a tonne of ingredients I’d never heard of – let alone used – and took hours (or even days!) of preparation.
But, eating vegan doesn’t have to be time-consuming, inconvenient or expensive!
Nut-Free
Nearly every vegan recipes I found online also required nuts which I can’t eat unless I want huge lips (not so bad), a red, runny nose & swollen, itchy eyes (not so fun), and digestive issues (really not fun!). My fellow nut-free vegans, I salute you, I know it hasn’t been easy in the past but please know, we’ve never had it so good!

How is this yoga? Ahimsa – “Not causing harm.” is the first step on the path of Yoga, according to the Yoga Sutras of Patanjali.
Many yogis choose to interpret this, in one way, as veganism.

Lazy vegan Omelette
π Super quick. Simplified down to only 2 main ingredients that you might not have already:-
π Chickpea Flour (high in protein, iron, fibre & naturally gluten-free)
π Nutritional Yeast (a complete protein with B-vitamins & minerals) π
If you’ve got those and any leftover veggies, you can cook along now. Takes 10-15mins π
Lazy Vegan “Bacon” Sandwich
π Super quick. Super simple. Nut-free π
3 Ingredients:-
π Tofu
π Guac
π Bread
Takes 5-10mins π

Lazy Vegan “Cream” of Butternut Squash Soup
π Plus a couple of bonuses ππThree snacks in the time it takes to make one + minimal ingredients = high level Lazy Veganism. Super simple. Super Scrumptious. Nut-free, as always π
3 Ingredients:-
π Butternut Squash (or pumpkin)
π Potato
π Red Onion
π Stock
π Salt, Pepper & Oil

Lazy Vegan Spaghetti & “Meatballs”
π These @soria_natural Organic, Gluten-Free & Nut-Free quinoa-based “meatballs” are vegan convenience food at its best (certainly here in Southern Spain, anyway) π
I also like to :-
– chuck them into a soft baguette to make my own “meatball sub” π
– cook them in gravy and have them over mashed potatoes π
